ZUCCHINE ALLA SCAPECE, a classic recipe from Naples is so delicious and easy to make. I love to serve it for antipasti (Or on a charcuterie board) along with Italian meats and cheeses. But it is also a great side dish!! It’s best for me served on top of toasted bread. The flavors are just incredible. The great thing about this recipe is that it stays for about a week in the refrigerator, so you can make it in advance when you are having a get together. Full recipe below and on my website www.miciamammas.com Ingredients (Serves 4) ⅓ cup Olive Oil, plus extra for frying 4 Garlic Cloves 2 lbs. Zucchini, slice into ⅛ inch circles 5 Tbsp. Apple Cider Vinegar ¾ tsp. Salt ⅛ tsp. Red Pepper Flakes ¼ tsp. Black Pepper 2 tbsp. Fresh Mint, chopped 2 tbsp. Fresh Basil, chopped Method Heat olive oil in a small pot for frying. I use a small sauce pot and fill it up a quarter of the way up. In a small frying pan, heat 1/3 cup olive oil and add the garlic. Heat on a very low flame until the garlic fork tender, making sure it does not burn. Turn off the heat and use a fork to mash the garlic into the oil. In the meantime, slice the zucchini in ⅛ inch slices and put on a dry dish towel in a single layer. Cover with another towel and pat dry. Begin to fry the zucchini in small batches for about 10 minutes until slightly golden brown. Remove from the pot and place on paper towels to drain excess oil. In a small bowl, mix the smashed garlic and oil, with the apple cider vinegar, salt, red pepper flakes, black pepper, mint and basil. Add in the cooled zucchini and combine with the dressing. Refrigerate in an airtight container for up to a week.

Red Pepper Flakes 10 Friggitelli Peppers (Sometimes called Cubanelle) 1 Onion -Sliced Thin 2 Garlic Cloves 28 oz. Puréed Tomatoes - Use whole canned and puree yourself 1 tsp. Salt ½ tsp. Pepper 10 Basil Leaves - Chopped In a large frying pan heat olive oil and add in the peppers. Saute the peppers on all sides (the skin will start to get soft). Then add the onions and garlic and saute until they get soft on a low flame. Add in the tomatoes and bring to a simmer. Season with salt, pepper and red pepper flakes. Cook covered for about twenty five minutes until cooked through on low heat. Finish with fresh basil and serve. Pro TIP…If you notice the tomatoes start to get too thick you can add a little water to your tomato can. Growing up my grandma always had something sweet for breakfast with her coffee. From a very early age these simple “S” cookies were a staple in our family. She would make them often and always have them in her cookie jar. I miss just being able to walk into her home and have one, but so glad that I have this recipe to remember her by. Recipe below and on my website www.miciamammas.com Grandma’s “S” Cookies Ingredients (Makes about 64 cookies) Ingredients 2 ½ Cups Flour 1 Stick Butter, cut into tiny cubes 4 Eggs 1 Cup Sugar- Maybe more 2 tsp Baking Powder ¼ tsp. Salt 1 ½ tbsp. Vanilla Method Preheat the oven to 350 degrees. Three large cookie sheets lined with parchment. In a bowl add in the flour. Add in the butter. Use your fingers to mix the flour and butter. Rubbing it between your fingers and making it almost like a bread crumb texture. Make a well in the middle of the mixture and add in the eggs, sugar, baking powder, vanilla and salt. Use a fork to combine until a dough begins to form and then use your hands to mix. Place the dough on the counter and knead for about 2 minutes. Cut the dough into quarters, then each quarter in half. Take a piece of the dough and roll it out into a tube (log) shape about 22 inches long. Then cut the log into 2 ½ pieces. Roll the 2 ½ inch piece out a little more until it is about 4 inches in length and form into the letter “S.” Do this with the rest of the dough. Chicken Breasts, about 6 pieces 1 Onion (6 oz.), cut in quarters 3 Celery (4 oz.), cut each stalk in three parts 5 Carrots (10 oz.), cut the top off each carrot and cut each carrot into 4 pieces 2 Rosemary Sprigs 10 oz. Sweet Potatoes, peeled and cubed 1 Fennel, sliced 3 Garlic Cloves ¼ Cup Olive Oil 1 ½   tsp. Salt ¾  tsp. Pepper 6 tbsp. Butter, very softened 1 tsp. Italian Spice Blend, I use Teresa’s Tuscan Spice 1 Lemon, Zested Lemon, quarter Method Preheat your oven to 400 degrees. In a shallow pan put the onions, celery, carrots, sweet potatoes, fennel, and garlic in the bottom of a pan and season with olive oil, rosemary  and 1 tsp. salt and ½  tsp. pepper. Combine well. In a small bowl add the butter, Italian spice, ½ tsp. salt, ¼ tsp. pepper and lemon zest. Lay the chicken breasts on top of the veggies, top each piece of chicken with an equal amount of butter. Add in the lemon wedges. Cover with aluminum foil and bake for about 30 minutes.   Remove the foil and continue to bake for about another 30 minutes. Recipe below and available to print on my website. Be sure to like, share and follow Chocolate Croissants Ingredients (Makes 8 Croissants) 2 Puff Pastry Sheets 4 tbsp. Salted Butter, melted 4 oz Chocolate Bar, I use semi sweet, sliced into 1 inch small bars 1 Egg, beaten Method Preheat the oven to 400 degrees. Line a large baking pan with parchment. Dust some flour on a clean surface. Place the puff pastry on the counter and roll out to a 14 x 9 rectangle. Measure about 3 ½ inches from the top of the puff pastry sheet and slice into four pieces/parts. Brush with melted butter. Place the chocolate slices on each side of each piece of the puff pastry. Use your hands to roll the right side and then the left side inwards to form a croissant. Should be about the three rolls inward on each side. Place it on the baking sheet, open side down. Repeat this process for the rest of your puff pastry. Brush with the beaten egg and bake for 20 minutes. Tortoni is a frozen Italian “ice cream” like dessert usually flavored with almonds. It was a dessert originally created by Giuseppe Tortoni.  He was Neopolitan and owned a place in Paris named Cafe Tortoni where he served these delicious treats. This dessert actually made its way to the US in the mid 19th Century and was sold as street food.   For me Tortoni is something I ate as a kid all the time. It was a dessert that I always looked forward to having at our weekly family dinner nights at Gargiulo’s restaurant in Coney Island, Brooklyn. Their Tortoni is legendary. The weather is finally getting nice out. So, it is time to whip out my Espresso Martini AFFOGATO recipe. Espresso martinis are all the rage. But I wanted to do something a little different. So I kicked it up a notch. For those of you that dont know, affogato is a traditional Italian dessert made with vanilla gelato and hot espresso. Its delicious all by itself. But when you add some @vangoghvodka double espresso vodka, it takes on a whole new life!! And wow is it incredible. I top it with whipped cream, chocolate syrup and a cookie of some sort. I mean why not? Right? You might as well go for it!!! Full recipe below and on my website (link in bio) Espresso Martini Affogato (Serves 1) 2 Scoops of Vanilla Gelato or Ice Cream 1 Shot of Espresso - Freshly Brewed and Warm ½ Shot @Van gogh Double Espresso Vodka 1 tbsp. Chocolate Syrup 2 Tbsp. Fresh Whipped Cream 1 Cookie of Choice Put two scoops of gelato in a heat safe glass. Pour the espresso over the ice cream. Then pour in the double espresso vodka. Top with the chocolate syrup, whipped cream and a cookie. Serve immediately.

Homemade bread is easier than you think and so much better than store bought. All I do is read labels and the ingredients used in our bread are appalling. It is full of all sorts of preservatives that are so bad for you. So I decided I was going to teach myself how to make my own bread. After many attempts and failures I am so excited to share this recipe with you. It’s foolproof and easy to do. Recipe below and on my website www.miciamammas.com Homemade Bread Ingredients (serves 6 to 8) 3 Cups 00 Flour 1 tsp. Salt 1 Packet of Rapid Rise Instant Yeast 1 ½ Cups of Lukewarm Water 1 tbsp. Olive Oil Method In a bowl add in the flour, salt, instant yeast and combine. Add in the lukewarm water and olive oil and stir with a fork until the dough is formed. It should be sticky but not too wet. If it is too wet, sprinkle in a little bit of flour and mix. Cover with a cloth and put in a dark dry place for two hours. Then sprinkle some flour on a large piece of parchment. Fold the dough into a ball and cover for another thirty minutes. In the meantime, preheat the oven to 450 degrees. Put the dutch oven into the oven to warm it up. Place the bread in the dutch oven. Using a knife, score the bread, cover and bake for 30 minutes. Uncover and bake for another 15 minutes. Panna Cotta is a great dessert for Easter. It is easy to do and can be made in advance. Ingredients Full recipe below and on my website www.miciamammas.com Please note this recipe makes about 16 (6 oz.) servings, so feel free to reduce the ingredients to fit your serving needs. Ingredients 2 Cups Whole Milk 2 Tablespoons Unflavored Powdered Gelatin 6 Cups Heavy Cream 2 Cups Honey 6 Tablespoons Sugar 6 Tablespoons Pure Vanilla Extract 2 Pinches Salt Assorted Berries for Garnish 16 (6 Ounce) Heat-Safe Glasses   Method Place the milk in a sauce pan and sprinkle with gelatin. Let it stand for 5 minutes until the gelatin is softened. On medium heat, simmer the milk mixture for about 5 minutes. Do not let it boil. Stir in the heavy cream, honey, sugar, vanilla and salt. Cook for about 6 minutes until the sugar dissolves. Be sure to continuously stir. Take off the heat and let the mixture cool. Using a ladle, evenly distribute to the heat-safe glasses. Cover with plastic wrap and put in the refrigerator for about 5 hours until firm.
