🍝 If there were one food I could eat forever, it would be pasta. It’s so comforting and the perfect vehicle for vegetables, cheese, and all things good! My dream vacation is to carb-load my way through Italy with pasta being my main choice of carb! I make my pasta bolognese with TVP, aka texturized vegetable protein, and a couple of veggies. TVP is a high-protein meat substitute made from defatted soy flour that has been cooked and dried to create a chewy, meat-like texture. A standard 1/4 cup serving provides roughly 15–21 grams of protein once rehydrated! Comment “ PASTA” for my high protein vegan spaghetti bolognese recipe and a link to my favorite TVP! Bonus: the sauce is amazing in lasagna or even sandwiches!

💾 SAVE for the easiest way to impress (and win over every auntie at the party)! “It’s not too sweet.” IYKYK—that’s the highest compliment you can get from an auntie at any family gathering. 🙌🏽 Homemade whipped cream is the move if you want that perfect balance—light, fluffy, just sweet enough, and 100% better than anything from a can or tub! I’m sharing all the tips on my blog: how to flavor it, adjust the sweetness, swap out sugars, and make it ahead without it turning sad and soupy or prevent it from becoming butter! 🇲🇽 🇮🇳 Comment “TACOS” for the recipe! Happy Cinco de Mayo! If you ask any Indian person what one of their favorite cuisines is, I can guarantee that most would say Mexican! It’s flavorful and delicious, and there are a lot of similarities between Indian and Mexican cuisine! With this in mind, I mashed together two of the dishes I love- tacos dorados de papa, aka fried tacos with potato filling, and aloo paratha, which is a flatbread filled with a spiced potato mixture. First, I started with tortillas. @masienda sent me a ton of masa harina, so I decided to try to make my own tortillas. Now, don’t you have to do this-get those store-bought tortillas! I learned from my friend @chefclaudiasandoval that tacos dorados are typically served with a salsa roja or consomme, so I made a tomato chutney consomme! I added all the ingredients that would be in a traditional consomme and let that simmer, then I blended it up and added the Indian spices! For the filling, I went with a traditional aloo paratha filling plus some cheese! I gave them a quick pan fry until they were crispy and golden and then served them up with the tomato chutney consomme, lettuce, tomatoes, pickled onions, sour cream, and avocado. These tacos dorados de aloo are so crispy and crunchy, and they literally bring together two of my favorite cuisines! Gajar ka halwa is a Indian dessert made by cooking grated carrots down in ghee and sugar until they’re tender and spicing it with cardamom! It’s a such a simple and comforting dessert and as much as we’d like to *think* it’s super “ healthy”, I thought it could be better! This granola hits all the right notes - crunchy, slightly sweet with tons of nuts and a hint of cardamom! It’s super easy to make - just toss everything in a bowl, add your sweetener and bake! 🧈 What’s better than butter? Makhan! Aka cultured butter! It’s way more flavorful and is my butter of choice when I’m craving butter and bread! Makhan is usually made with buffalo milk, but I opted for a high-quality Jersey cow heavy cream which is easier to find! It’s so simple, you just inoculate heavy cream with yogurt bacteria and then churn it! When I was younger, my mom would smother my morning bhakri (whole wheat flatbread) with Makhan and fold it in half like a butter taco with some chai, and I was in heaven! What’s your favorite way to enjoy makhan?! P.S. You also get fresh buttermilk with this recipe, which you can use to make biscuits, kadhi, chaas, or pancakes. Paad Pill Dill Pickles aka PPDPs loading…. 😂 I have a good feeling about this one lol 😂 decided to actually go ahead and try my unhinged pickle idea and make the Hawaban Harde pickles -Hawaban Harde or what I like to call them, paad (fart) pills, are pellets of Ayurvedic ingredients that help with gassiness and digestion! I grew up eating them after meals and they have a salty sour taste! It’s definitely an acquired taste but my family loves them! They reminded me of pickle brine after trying Super Duper Burger pickles so I decided why not mash them up? I’ll share how the experiments turns out soon! 😂 who knows it might actually be good!
