New coffee🚨Peru Inispata Bourbon snaps with red delicious apple, milk chocolate & hazelnut.  Crafted by our longtime partner Mario Villano, this coffee captures the harmony between the Amaybamba region’s ideal growing conditions, Mario’s craftsmanship, and Wonderstate’s commitment to meaningful producer partnerships. Bourbon is one of the oldest coffee varieties in the world that’s still cultivated today. It’s become an increasingly rare variety to find, as it’s been replaced by newer hybridized varieties. Yet, in some remote areas such as the Incawasi Valley, producers like Mario still cultivate Bourbon alongside hybridized varieties. Bourbon is known for its dense chocolate and sugary tones, complemented by ripe fruitiness and a long, sweet finish. In many ways, this Bourbon selection from Inispata is an ode to the disappearing flavors of coffee around the world.

Earlier this week our owner, TJ Semanchin, had the honor of speaking in Washington, D.C. alongside fellow small business owners and Senators Schumer, Klobuchar and Smith, about the devastating impact tariffs are having on main street businesses. We’re proud to advocate for our communities, producer partners, and customers in support of the proposed legislation which would exempt small businesses from the new tariffs. In rural communities like our home Viroqua, Wisconsin, small businesses power over 54% of employment, contribute roughly 44% of U.S. GDP, and make up more than 97% of all U.S. exporters. Nothing compares to the scent of coffee flowers in bloom — especially when it’s the delicate, perfumed blossoms of the gesha varietal. On our last visit to Peru, those white blooms filled the air with their intoxicating fragrance, a promise of the complex coffee to come. From those fragrant flowers to sweet, ripened cherries and finally to the brew, coffee is pure magic all the way through.

Farmers market season is here! 🥦🍅🥕 The Dane Country Farmers Market (@danecofm) is the largest producer-only market in the country and it’s right outside the front door of our Madison cafe. We’ll have the walk-up window going for your quick coffee and pastry needs and the full food menu and espresso drinks inside. Fill that tote bag and stop on by!

You can never fully understand the realities and challenges of specialty coffee farming until you’re on the ground—walking the land, meeting the producers, and hearing their stories firsthand. For anyone working in coffee, this kind of experience is invaluable. It’s something we’ve long dreamed of sharing with our team at Wonderstate. In 2024, we launched an employee program that brings this vision to life. Each quarter, one team member is nominated by their peers for embodying our core values: Honoring Relationships, Excellence. Always., Gratitude, In Service to Our Collective Future, and Celebrating Joy, Purpose and Wonder. The selected team member is awarded a trip to visit our producer partners at origin. Our most recent group just returned from an incredible journey to Guatemala—carrying back a deeper connection to the people and stories behind the coffees you’ll soon see on our menu. Their experience is a powerful reminder of why we source with such intention and care. We’re incredibly grateful for our hosts and their amazing hospitality; Codech Cooperative and producers Wendy Hernandez and Porfirio Valesquez. Cheers to our inspiring team!

Abel Candia’s Gesha Inka coffee from the Cusco region of Peru is a remarkable find, bursting with complex fruit flavors like pink lemonade, white peach, and blueberries. 🍋🍑🫐  The Gesha Inka variety, initially mistaken for Panamanian Gesha, was revealed through genetic testing to be a unique strain related to SL9, an Ethiopian-rooted Typica variety. Thriving in the extreme altitudes and cool climate of Incahuasi, this rare variety offers resilience and exceptional flavor complexity as seen in this rare and delish coffee.

🫐 Blueberries are in! In our Blueberry Maple Flat White, that is. Crafted by River, our bar lead at the Viroqua cafe, this lovely beverage is a sweet spin on a cafe classic. Come try it at all of our cafes! ☕️
