That’s exactly why I came up with this one-pan pork and fennel meatball gnocchi. Because meal prep doesn’t have to end up a soggy mess. It keeps so well in the fridge and actually tastes just as good a few days later! I’ve also been slowly making the switch from plastic to glass, and I’m genuinely obsessed with these @seedandsproutco meal prep containers. 🍣 VEGAN TOMATO TUNA NIGIRI 🍣 You guys loved the viral ice cube tray sushi/nigiri hack we shared back in 2023, but I never liked having to use cling film to get them out. So the hack is back and better than ever, without any single-use plastic and with an even better “tuna” topping made from marinated tomatoes. This one’s great for getting kids who pick the nori off their sushi to try sushi in a different form! Simply spray the 25ml @seedandsproutco silicone moulds with olive oil (this helps them release easily and stops the rice sticking), add your toppings, press in the rice (optionally add squares of nori if you like), chill for 30 minutes to firm up, then flip, press and enjoy the perfect bite-sized pieces (cut in half for kiddos!). If you’re looking to invite some beautiful, functional and healthy products into your home, you can use code HALEE10 for a discount on orders over $149 🫶 [Recipes] Muesli bars: 1/2 cup of rolled oats 1/2 cup of goji berries 1/4 a cup of sunflower seeds 1/3 cup of quinoa puffs 2 tbs of poppy seeds 1/3 cup honey 1/3 cup coconut oil 1 tsp vanilla extract Heat honey and coconut oil in a saucepan, add vanilla and bring to boil for a couple of mins. Mix dry ingredients. Pour heated liquid over dry ingredients, mix and press into container or baking dish. Refrigerate for a few hours and drizzle with white chocolate if you please! Muffins: (Recipe adapted from ‘What Great Grandma Ate’ blog) 1 ripe banana 1 zucchini 1 cup spinach 1 egg 2 tbsp milk 2 tbsp melted butter 1 tsp vanilla essence 1 1/4 cup plain flour 1/2 cup brown sugar 1/3 cup cacao 1 tsp baking soda 1/4 tsp salt 1/2 cup dark chocolate chips Blend banana, zucchini, spinach, egg, butter, milk and vanilla until liquid. Mix dry ingredients. Pour wet ingredients into dry ingredients and fold in. Add choc chips. Bake for around 20mins at 175C. Happy picnic-ing 🌸🫶✨
