Building on-farm, USDA inspected processing was risky and hard, but it was the next hurdle in transitioning our farm into a little food hub. We've been processing livestock for 18 years, and we are grateful to see more small and medium-sized plants than ever. There are also more and more farmers selling their goods directly to consumers- but, there are still not near enough. Over 85% of the beef packing in the United States runs through one of four large, multinational corporations. Take time today to find a farmer and support them. Our food system needs resilience as much as anything.
