1 tsp salt (don’t add salt if the meat is kosher) juice of 1/2 an orange juice of 2 limes 4 tbsp olive oil mix well, let marinate for at least 20 min Roasted bell pepper salsa: 2 red peppers, charred, deseeded and chopped small dice 2 roma tomato, charred and chopped fine 2 jalapeno, charred, deseeded, chopped small dice 1/2 cup chopped cilantro 1/2 tbsp ,minced garlic 1/2 tsp black pepper 1 tsp salt 2 tbsp olive oil juice of 2 limes Mix well pineapple pico de gallo: 1 cup diced pineapple 1/2 onion, diced small 3 tbsp chopped cilantro 2 jalapeno, deseeded, diced small 1/2 tsp minced garlic juice of 2 limes 1 1/2 tsp flakey salt mix well till combined Grill the skirt steaks on high heat for only 2 1/2 min per side for medium doneness.
