Will, Jodi, and Hattie loved experiencing @groundswell_agriculture! With over 10,000 attendees all focused on regenerative agriculture, we came home with new friends and ideas. Traditionally, tallow was used for cooking, preserving meat, and making fuel and soap. It was replaced by industrial seed oils in the early 1900s. Today, tallow is experiencing a major culinary and skincare revival and we are incredibly proud to be a part of it. Our holiday turkeys got some sweet treats this week- melons for all! We enjoyed hosting @jakepaul on the farm, and we were grateful he brought @juttaleerdam and his dad, Greg! Our beekeeper, Christian, captured a swarm of bees that located at our farm school, Bluffton Outdoor Academy We enjoyed hosting our Young Farmers Camp this week- so many sweet kids! They enjoyed cattle moves, compost digging for bones, and equine rides! It was a great week in Bluffton!

We've been making tallow products since before they were cool- in fact, in 2010, when we launched our tallow bar soap, we couldn't hardly give it away. The soap was great- it's the lovely recipe we still use today, but the thought of bathing with animal fat simply wasn't a thing. Today, we can't keep our tallow products in stock! We are glad to see this trend come, and we hope it's here to stay. But, for the record, those of you tallow lovers who have not yet tried pork lard products are missing out. Tallow is like the pretty, popular girl in high school- she's got the looks and the legs. Lard is the funny girl with a great personality. She's the one you want, and soon enough, I bet lard will be all the rage.

Last year, this goat decided she liked the company of bulls more than goats. We called her "Flip" because flipped species- and thank goodness she did! She's typically the bold herd leader moving the fellas from one paddock to the next. There's a cute story about a father who gives his son an old car. He told his son to take it to the pawn shop, a local used car dealer, and a classic car club to see how much the car was worth. The boy got wildly different values from each despite the car's physical condition remaining unchanged from one stop to the next. Flip's more valuable as a herd bull than a #goat. We enjoy "flipping" their stories around to teach our kids about worth and value.

Building on-farm, USDA inspected processing was risky and hard, but it was the next hurdle in transitioning our farm into a little food hub. We've been processing livestock for 18 years, and we are grateful to see more small and medium-sized plants than ever. There are also more and more farmers selling their goods directly to consumers- but, there are still not near enough. Over 85% of the beef packing in the United States runs through one of four large, multinational corporations. Take time today to find a farmer and support them. Our food system needs resilience as much as anything.

It has been a hot week in Bluffton- check out this beautiful, foggy cattle move we captured on the drone! Thank God for dry ice, online orders are still being loaded despite this wave of heat. Our Garden has given us a bounty this week- plenty of squash, watermelon, and flowers. Please stop by the General Store (101 Church Street, Bluffton, GA 39824) to pick up some fresh meat and produce. Our progress on transitioning our poultry plant to also harvest pigs, goats, and sheep is almost complete! We can't wait show yall the final result!
