I swapped the chili flakes and brushed the corn before grilling- it adds flavor, gives gorgeous color, and holds its own in the heat. I used @yellowbirdsauce jalapeño hot sauce- rich, savory, and perfect for layering. After charring, mixed it into mayo, slathered it on, rolled in cotija, then topped it with cilantro.
