We LOVE mustard around here, and this Honey Mustard Pickling Brine is pretty special! • This is one my husband and I have worked on throughout our relationship…and has been adjusted to our liking through the years. • This brine is adapted from a traditional honey mustard pickle recipe that my mother and grandmother made for me growing up. • It’s tangy and savory and so versatile! • Really, this could be a salad dressing, on its own, and the flavors lend to that as well: • Think honey mustard meets Italian dressing…sort of. • We use this for pickled beets that you see here (I roast the beets in the oven with olive oil and salt and pepper first), for pickling cucumbers, and also for marinades on our farm raised beef and chicken! 🤤 • This recipe yields 8 pints, so adjust as needed! (For approximately 6 pounds of produce that is being pickled) • Ingredients: 6 cups of ACV 3 cups filtered water 3 cups raw honey 2 Tablespoons pickling salt 6 Tablespoons mustard powder 1 Tablespoon turmeric powder 1.5 teaspoons of each: coriander seed, black peppercorn, mustard seed, clove • Instructions: 1) In a large pot, combine all ingredients…vinegar, water, honey, and dry ingredients (salt, mustard powder, pickling spices, and turmeric). 2) Bring to a boil, stirring well to dissolve the honey and salt. 3) Once brine comes to a boil, cook an additional 10-15 minutes, to taste, and to ensure everything is dissolved. 4) Once it tastes right to you, (add or takeaway whatever works for you and your family!) pour over whatever veggie you’re canning and then either process in a water bath canner for 10 minutes, or place right into the fridge and allow to fridge pickle for 2 weeks before enjoying! • And that’s it!
