STOP EVERYTHING 🍫✨ You NEED to try these homemade FERRERO ROCHER-style bites! They’re gluten-free, dairy-free, paleo, and refined sugar-free… but you’d never guess it 😍 Crispy, creamy, chocolatey heaven made with just a few wholesome ingredients 🙌 Here’s what you need 👇 Filling: 🍯 1/2 cup almond butter 🍁 1/4 cup maple syrup 🌿 1/2 tsp vanilla extract 🧂 1/4 tsp salt 🍫 1/4 cup cocoa or cacao powder 🌾 1 cup puffed quinoa or rice cereal Other ingredients: 🌰 2/3 cup hazelnuts (raw or roasted) 🍫 4 oz dark or semi-sweet chocolate (dairy/refined sugar free works great) 🥥 2–3 tsp neutral oil (like coconut or avocado) ⸻ How to make them: 1. Roast hazelnuts at 350°F for 8–10 mins if raw, then rub off the skins once cooled (or skip this if you’re using pre-roasted). 2. Mix the almond butter, maple syrup, vanilla, salt, cocoa, and puffed cereal in a bowl. If it’s too dry, add a bit more almond butter or syrup; if too runny, add more cocoa. 3. Scoop into balls with a hazelnut in the center of each. Place on parchment and chill. 4. Melt chocolate with oil, then stir in chopped hazelnuts (save some for topping). 5. Dip each ball in the melted chocolate, sprinkle with remaining chopped hazelnuts (and flaky salt if you like!). 6. Chill until set.
