Most (actually, almost all) commercial tallow is rendered under pressure at extreme temperatures because heat extracts fat quickly, and quickly means cheap. Not us. At Toups, we: 1. Source from the Best — We source fresh local beef fat from local, regenerative farms we know by name. 2. Use Only the Good Stuff — While others use scraps, we use suet, the premium cut of tallow richest in vitamins A, D, E, and K. 3. Protect It in Production — Rendering “low and slow” means we never boil out the best parts, keeping nutrient content intact. 4. Don’t Vaporize the Vitamins — Most steam-deodorize the final product, vaporizing whatever vitamins manage to survive rendering. We don’t! So, yes, as it turns out, the most controversial thing we could do is make quality products at scale. The slow way. And we wouldn’t want it any other way.
