High quality sourdough = no crap symptoms for me. I can literally have my “cake” and eat it, too. As someone who has struggled with gluten intolerance for MANY years (and it’s only getting worse do to modernized wheat) I would have unwanted symptoms anytime I ate any type of bread or baked good. Immediate inflammation and bloating, clogged lymphatic system, brain fog, irritability, gas and even diarrhea (tmi sorry). It wasn’t until four years ago when I started my sourdough journey that those symptoms started going away. Because of sourdoughs natural fermentation process during rising, the lactic acid bacteria helps to break down nutrients for adequate absorption and helps to digest the gluten in your stomach for better digestibility. Now, that doesn’t mean that all sourdough is GOOD. If you’re still using flour that is GMO, sprayed with pesticides and pretty much lack any nutrients, you still might be able to tolerate it better than other breads, but it’s not “nutrient-dense”. That’s why we try to use organic flour as often as possible and preferably FRESH MILLED to keep as many nutrients intact when making bread. My favorite grain is Einkorn because it’s the ORIGINAL ancient grain, with only 1 DNA strand and 14 chromosomes, making it the most digestible grain for the human body. There is a learning curve with this grain, but we’ll be sharing the process of how to incorporate it into your life daily, very soon! If you have gluten intolerance and aren’t making sourdough, you’re missing out! I prefer to let mine ferment 36-72 hours for extra digestibility, but many people can eat it after 18-24 hours with no symptoms. For Memorial Day we’re doing 25% off to start your journey with us.
