Nudea’s very own @marinabeau whips up a vibrant spring recipe all while wrapped in the super soft comfort of organic cotton. Leek and Spinach Crustless Quiche 🌿 Ingredients: 2 leeks, trimmed, cut in half, finely sliced 1/2 shallot, finely chopped 50g coriander, leaves only, roughly chopped 250g baby spinach, roughly chopped 5 eggs 50ml double cream 1/3 cup parmesan, grated Olive oil, salt and pepper 1/ Preheat the oven to 180°C fan and lightly oil a 20cm round baking dish. 2/ In a large pan, add 2 tbsp olive oil and saute leeks and shallot until softened, about 5 mins. 3/ Add coriander and spinach until wilted and season with salt and pepper. Remove from heat. 4/ In a medium bowl, whisk the eggs, add the cream, parmesan, a sprinkle of salt and pepper and mix until combined 5/ Add your leek mixture to the baking dish first then pour in your egg mixture and lightly stir through. 6/ Bake for approx 30-35 mins until golden and puffed up a bit. Serve with a simple salad and crusty baguette.
