Spooky Choc Mint Slice 👻🌱🍫 Three layers of rich, fudgy goodness, with no baking required! Ingredients
Base
👻 60g @macr0mike Spooky Choc Mint Biscuit Almond Protein
🍪 1 cup crushed choc or plain biscuits
🌾 ½ cup rolled oats
🍫 1 tbsp cacao powder
🍫 ⅓ cup melted dark chocolate
🥜 ¼ cup smooth almond butter
🍁 2–3 tbsp maple syrup or plant milk Mint Filling
🥜 1 cup raw cashews, soaked + drained
🥜 ⅓ cup smooth cashew butter
🍁 ¼ cup maple syrup
🥥 3 tbsp coconut cream
🌱 1 tsp peppermint extract Topping
🍫 100g dark chocolate, melted
🥥 1 tsp coconut oil
💚 1 tbsp coconut yoghurt
💚 ½ tsp matcha powder + 1 tsp maple syrup Method
Add the biscuits and oats to a food processor and pulse into a crumb. Add the protein, cacao, melted dark chocolate, almond butter and maple syrup, then process until sticky. Press firmly into a lined tin and freeze. Blend all mint filling ingredients until silky smooth, spread over the base and freeze for 20 minutes. Melt the dark chocolate with coconut oil and pour over the mint layer. Add dots of the green drizzle and drag a toothpick through to create a swirl. Freeze for another 30 minutes, allow to sit at room temperature for 5 minutes, then slice with a warm, sharp knife.
