This week on #TuesdayTips: Easter Cake Nest! 🐰✨ Ingredients: 5 egg whites 70g sugar 60g milk 60g oil 6g vanilla 6g corn starch 60g cake flour 150g cream 1 vanilla bean 75g white chocolate Raspberry jam Butter cream recipe: 190g cream 1 vanilla bean 75g white chocolate Raspberry jam How to make: Add the 5 egg whites into a mixer. In a separate bowl, add in the milk, oil, and vanilla. In another bowl, add in the flour and corn starch. Take the milk mixture and warm it up until it’s warm to the touch. Add in the flour mixture to the milk and mix until smooth. This is the base for the cake. Put it on a low heat so it’s warm but not cooking. Whip together the egg white mixture. Start by adding in ⅓ of the sugar in. Then slowly add the rest of the sugar once the egg whites start whipping. This will be the meringue. Add in the base of the cake into the whipped mixture. Combine all of the ingredients together. Place this mixture into a baking tray and spread it all out. Place this in the oven to 400 degrees fahrenheit. In a pot, add in 150g of cream and vanilla bean and bring it to a boil. When it’s ready, add in the white chocolate and remaining cream. Make sure the remaining cream is cold. Mix all this together and put it in ice to cool. Once the cake base is ready, remove it from the tray. Add in a piece of parchment paper over the top until it’s cool. Use a cake ring to cut rings out. Put the white chocolate cream mixture into the mixer and whip it all together. This will be a butter cream. Add in a couple spoons of raspberry jam into the cream mixture. Put a layer of cake base in the cake mold and layer it with the butter cream mixture. Add in another cake layer and repeat. Remove the cake mold and cover the slides with the butter cream. Temper some white chocolate and spread it on the counter. Use a knife to make some chocolate curls. Decorate the sides of your cake with the white chocolate. Take a piece of ice and take untempered white chocolate and line the ice with the chocolate. Shape it like a nest on top of your cake.
