Simple creamy garlic pasta with smokey tofu bites 🧄🍃 made in collaboration with my friends @hedleyandbennett! Makes 2 serves Ingredients: Smokey tofu bites: 200g firm tofu 2 tbsp soy sauce 1 tbsp olive oil 1/2 tsp liquid smoke 1 tbsp bbq sauce 1 tsp smoked paprika Garlic pasta: 4 large garlic cloves 2 tbsp vegan butter 3/4 cup soy milk 1 tsp veggie stock powder 1 tsp dijon mustard 300g pasta, cooked as per packet instructions Salt and pepper, to taste Vegan cheese, to serve (if desired) Method: Preheat the oven to 190 degrees celsius, fan-forced. Line a baking tray with baking paper Cut the tofu into small cubes and add to a mixing bowl with the soy sauce, olive oil, liquid smoke, bbq sauce and smoked paprika. Toss well, until the tofu is well-coated, then transfer to the lined baking tray and place in the oven to bake for 20 minutes Put your pasta on to cook as per packet instructions Finely dice the garlic cloves. Place a large pan over medium-high heat on the stove and add the vegan butter. Once melted, add diced garlic and fry for 1-2 minutes, then add soy milk, veggie stock powder and dijon mustard and combine well. Reduce to heat to low, then add the cooked and drained pasta. Stir until pasta is well coated, then remove from the heat Serve hot, with smokey tofu bites and vegan cheese on top. Enjoy! #vegan #pastarecipe #veganrecipe #plantbased
