Apron from @hedleyandbennett ♥️ RECIPE ⤵️ 🥘 Ingredients CHICKEN 1 chicken breast (cut in half horizontally) 1 cup all purpose flour (seasoned with your seasonings of choice) 2 whole eggs (whisked) 1 cup of Italian bread crumbs 1 cup extra virgin olive oil Salt & pepper to taste EVERYTHING ELSE Marinara sauce Shredded mozzarella cheese Grated parmesan cheese 1 baguette (cut in half horizontally) 2 tbsp butter (to toast the bread) Fresh basil ✍️ Instructions Preheat olive oil in a pan over medium-high heat. While that preheats, take your cut in half chicken breast, lay it on a baking sheet, cover it with plastic wrap, and beat it until it’s thin. First dip it in the seasoned flour, then in the whisked eggs, and finally in the Italian bread crumbs. Be sure to fully coat the chicken during each step. Once the oil is preheated, CAREFULLY lay the chicken in the oil away from you and fry until the outside is golden brown and the chicken is cooked to an internal temperature of 165 fahrenheit (about 2-3 minutes per side). Once it’s finished, set on a cooling rack and immediately season with salt and pepper. While the chicken rests, preheat your broiler and add 1 tbsp of butter to each side of your cut in half baguette. Top the chicken with marinara, shredded mozzarella, and grated parmesan. Broil the chicken and the bread together until the bread is golden brown and the cheese is golden brown and melted. The bread may toast faster than the cheese, so pay attention. Add a layer of marinara to the bottom half of the baguette, followed by the chicken, some fresh basil, the top half of the baguette, and enjoy!
