Game Day Cheeseburger Empanadas feat the @hedleyandbennett NFL Collection Apron & Chef Knife 🔪 🏈 Recipe (makes 30 mini or 20 standard empanadas) 👇 Ingredients - 2lbs ground beef, 3 packs 5 inch empanada discs, 3 cups shredded cheddar cheese, 1 onion (diced), 1/3 cup chopped pickles, 1 cup cooked & chopped bacon, & about a quart of peanut oil for frying.  Sauce - 1 cup mayo, 1/2 cup ketchup, 1/4 cup spicy brown mustard, 1/3 cup pickle juice, hot sauce & burger seasoning to taste.  Instructions - Cook down the ground beef on a medium heat and season generously with salt, pepper, garlic, cayenne, paprika or use my Crust & Caliente Rubs. Add chopped onion, pickles, and bacon.  Make the sauce by combining the mayo, ketchup, spicy brown, mustard, pickle juice, hot sauce, & burger seasoning. Add about 1/2 a cup of the sauce to the ground beef.  Cut the heat, add 1/2 a cup of shredded cheddar cheese, and then once completely cooled, fold in an additional 1/2  cup of cheddar cheese.  Prepare empanadas by laying out the discs, adding a little bit of shredded cheese, followed by 3 tbsp of filling, followed by more cheese on top (it’s important not to over stuff them so that there are no breaks in the seal!!!) Fold the empanada dough and seal tightly. Either crimp with a fork or twist and pinch to secure the seal in style.  Fry at 350°F for about two minutes or until golden brown. Let cool and serve with the burger sauce. You can make these ahead of time and prep them in the fridge and then fry them right before the game, or even freeze them and fry them at 325°F.
