Dan Dan Noodles with Pork These are rich, numbing and have the signature Sichuan heat. I used my homemade chili oil which is extremely spicy. Also wearing a new apron I got from @hedleyandbennett Recipe: Sauce: 1 tsp sesame paste 1 tbsp light soy sauce 1/4 tsp dark soy sauce 1/2 tsp Chinkiang vinegar 2-3 tbsp chili oil with sediment 1/4 tsp ground Sichuan pepper 1 tbsp stir fried preserved vegetable (Yibin yacai) (optional) Pork Topping: (enough for two bowls) 1 tsp minced ginger 4 oz ground pork 1 tbsp Shaoxing wine 1 tsp sweet flour sauce 1 tsp light soy sauce 1/2 tsp dark soy sauce Directions: 1. Combine sauce ingredients in a medium sized bowl, plus the preserved vegetable after stir frying until fragrant. 2. Heat oil in a wok, cook ginger until fragrant, add pork and seasonings, cook until browned. 3. Boil 4 oz of dried noodles, drain and add to bowl. 4. Top noodles with the pork topping, leafy green of your choice and garnish with sliced green onions. 5. Stir to combine and enjoy. #dandannoodles #wok #szechuanfood
