The flavor is smooth, mellow, and won’t overpower your food. 👇🏾 Full recipe below! #GrazaPartner #airfryerpapi Ingredients: Smashed Potatoes: 15 baby Yukon gold potatoes 2 tbsp olive oil (Sizzle Spray) 1 tsp dried rosemary 2 tsp garlic powder 1/2 tsp salt 1/2 tsp pepper Spinach: 8oz spinach 1 tbsp olive oil (Sizzle Spray) Salt & pepper to taste Salmon: 20oz skinless salmon fillets 1 tbsp olive oil (Sizzle Spray) 1 tsp paprika 1 tsp garlic powder 1 tsp onion powder 1/2 tsp salt 1/2 tsp pepper Scallion Sauce: 4 scallions, chopped 1/2 cup mayo 2 tbsp Greek yogurt or sour cream 1 tsp lemon juice 1/2 tsp Dijon mustard 1/2 tsp salt Directions: 1. Place the potatoes in a large pot and cover with cold water. Bring to a boil over medium-high heat and cook until fork-tender, about 12 to 15 minutes. Drain and let the potatoes sit for 5 minutes to allow excess moisture to evaporate. 2. Preheat the air fryer to 400°F (200°C). 3. Place the boiled potatoes on a flat surface. Using the bottom of a glass, gently press down on each potato to flatten slightly. Spray with olive oil and sprinkle evenly with rosemary, garlic powder, salt, and pepper. Transfer to the air fryer basket in a single layer and cook for 12 to 15 minutes, or until golden and crispy around the edges. 4. In a small bowl, combine the mayonnaise, Greek yogurt (or sour cream), lemon juice, Dijon mustard, and chopped scallions. Season with a pinch of salt. Stir well until smooth. Refrigerate until ready to use. 5. In a skillet over medium heat, add Sizzle Spray Add the spinach and sauté, until just wilted, 1 to 2 minutes. Season with a pinch of salt and remove from heat. 6. Cut the salmon into bite-sized cubes (about 1 1/2 inches). Spray with Sizzle Spray, paprika, garlic powder, salt, and pepper. Place in the air fryer basket and cook at 400°F (200°C) for 7 to 9 minutes. Shake the basket halfway through. 7. Place the crispy smashed potatoes on a plate. Add a bed of sautéed spinach, a dollop of scallion sauce and top with a piece of salmon. Serve warm and enjoy!
