It’s lemon season, and we can’t get enough 😋🍋 These delicious and protein-packed Lemon Cake Protein Truffles from @gretas.tiny.kitchen are the perfect treat this week! 🍋 Ingredients: - 1 cup oat flour - 1 scoop @furtherfood Vanilla Protein powder - ½ scoop @furtherfood Lemon Collagen - Juice of 1 lemon - 3 Tbsp pure maple syrup - 3 drops lemon oil flavor - 1 cup white chocolate chips - 1 cup nonfat cottage cheese - Pinch of salt - 1 Tbsp coconut oil Optional: - 2 drops yellow food coloring (optional) - Mint leaves for garnish 🍋 Directions: 1. To make, combine oat flour, protein powder, collagen, and salt. Set aside. 2. Next, blend cottage cheese, maple syrup, and lemon juice until smooth. Add to your dry ingredients and combine until a dough forms. 3. Roll the dough into 8 balls, place on a parchment-lined baking sheet, and freeze for a few minutes while you melt white chocolate and coconut oil in the microwave for about a minute, heating in 20-second intervals and stirring in between until smooth. Add lemon oil and yellow food coloring. 4. Coat each ball in white chocolate and top with tiny mint leaves. Refrigerate for about 25 minutes and enjoy!
