Herb Crusted Iberico Pork with Spicy Sweet Potato Purée 🍽️ made with @eat.campogrande Pork herb coating: Handful of basil or any other herbs you have Blended up breadcrumbs Lemon pepper thyme seasoning from @spiceology Pork binder : Dijon mustard & stone ground mustard 1. Score fat if there is any then rub pork with binder (not bones) and then dip all sides into herb coating 2. Seal with aluminum foil and bake at 375 for 20-25 min (per pound) This was iberico, normal pork cooks a bit differently so keep an eye out for it! Spicy Sweet Potato Puree : 4 large sweet potatoes (cut into small pieces) Olive oil Balsamic Smoked paprika Garlic powder Salt/pepper Toss all together Bake at 365 for 40-50 minutes or until just browned, tossing potatoes if needed.
