Save this recipe: Mum’s Classic Pavlova by KitchenAid A timeless favourite, made with love — and your KitchenAid Stand Mixer (or the one on your wish list). Crisp on the outside, marshmallowy in the middle, and finished with whipped vanilla cream and fresh mango. Mum’s going to love it. Ingredients: • 6 egg whites • 2 cups caster sugar • 1 tbsp cornflour • 1 tsp white vinegar • 300ml thickened cream • 1 tsp vanilla essence • 1 tbsp icing sugar • 2 mangoes, sliced Method: 1. Preheat oven to 120°C (no fan). 2. Line a large flat baking tray with baking paper. 3. Using the whisk attachment on your KitchenAid Stand Mixer, beat the egg whites until soft peaks form. 4. With the mixer on speed 6, gradually add the caster sugar — 1 tablespoon at a time — whisking for 6–8 minutes until thick and glossy. 5. Reduce the speed to low and gently mix in the cornflour and vinegar. 6. Spoon the meringue onto the tray, forming a tall round shape. 7. Reduce the oven to 100°C and bake for 1½ hours. Turn the oven off and leave the pavlova to cool completely inside — ideally overnight. 8. When ready to serve, whip the cream, vanilla, and icing sugar in the KitchenAid Stand Mixer until soft peaks form. 9.
