Seared salmon fillets, fluffy dilly potatoes, and a bright side salad – the perfect weeknight dinner, made all the easier to cook with @anolon’s EverLastTM Tri-Ply Clad Stainless Steel collection. #AnolonPartner For the potatoes: 2 large russet potatoes 2 tbsp chopped dill 1 tbsp butter Peel and cut your potatoes into bite-sized pieces. Add to a pot of water and bring to a boil. Cook for about 7-10 minutes, until fork tender. Drain and return to the pot, turning the heat to medium-high to steam dry the potatoes. Shake the pot around and/or use a spoon to move the potatoes around and rough up the edges. When they’re dry and fluffy, gently stir in your dill and butter. For the salmon: 2 salmon filets (skin on or skinless — up to you) Salt, black pepper, lemon zest Olive oil for cooking Dry your salmon filets with a paper towel and season generously on both sides with salt, pepper, and lemon zest. Heat a tablespoon or two of olive oil over medium high heat in your 10-inch Anolon clad stainless steel skillet. Add the salmon (skin-side down if it’s skin-on) and cook for 3-5 minutes, until it easily releases from the pan and is golden brown. Cook for another 2-5 minutes on the second side, depending on how well done you like your salmon. For the salad: 2 tbsp extra virgin olive oil 1 tsp honey 1 tsp grainy mustard Juice of half a lemon 1/2 a head of radicchio, thinly sliced 1 Cara Cara orange, cut into small pieces 1/3 cup castelverano olives, roughly chopped 1/4 cup almonds, roughly chopped Salt and pepper Whisk together the dressing ingredients, add in the salad ingredients, toss, and season with salt and pepper. This is my favorite type of dinner. A protein, a carb, and a veggie, jazzed up with the right technique, the right cooking tools, and a few delicious extras.
