Ingredients 2 tbsp olive oil 1 medium onion, diced 3 garlic cloves, finely diced 2-inch piece fresh ginger, grated 3 medium carrots, chopped 3 celery stalks, chopped 150–225g fresh pumpkin, peeled and cubed 1 tsp ground turmeric 1 tsp dried thyme 750ml + 250–350ml organic chicken bone broth (about 1L total) 1 tin white beans, drained Pinch of salt ½ tsp ground black pepper Handful fresh parsley, chopped 2tbsp kefir 6g True Biome 5g True Collagen How to make Immunity Soup 1. Heat the olive oil in a large pan over medium heat. 2. Add the onion, garlic, and ginger. Cook, stirring occasionally, until soft and fragrant (about 5 minutes). 3. Add the carrots, celery, and pumpkin. Cook for 5 minutes, stirring occasionally, until they start to soften. 4. Stir in the turmeric and dried thyme, cooking for another 5 minutes to release their flavors. 5. Pour in the bone broth and add the white beans. Bring to a boil, then reduce heat and simmer gently for 20 minutes or until the vegetables are tender. 6. Use a hand blender or regular blender to blitz the soup briefly, leaving some texture. Add more broth if you want a thinner consistency. 7. Stir in the fresh parsley, True Biome and True Collagen, and season with salt and black pepper to taste. 8.
