The roasted bone marrow blends beautifully with avocado and cacao to create a smooth and very chocolatey mousse texture packed with super nutrition.  Ingredients: 1/2–3/4 cup roasted bone marrow 1 avocado 2 tbsp cacao powder 2–3 tbsp maple syrup 1 tsp vanilla Instructions: Roast marrow bones at 375°F for 30–45 minutes, until fully cooked. Scoop the marrow from the bones into a bowl. Refrigerate for 10–15 minutes, or until it firms slightly and resembles soft butter. Add the marrow to a high-powered blender or mixer and blend on high until fluffy and creamy. Add avocado, cacao powder, maple syrup, and vanilla. Blend until completely smooth. Spoon into individual cups and garnish as desired. Serve slightly chilled. Optional toppings: berries, cacao nibs, whipped cream, shaved chocolate, or a pinch of flaky salt.
