Shoutout to @daynetxbbq who showed me the pro move to slice the belly in half - two smaller pieces are easier to cook and easier to carve. RECIPE: Smoked Pork Belly, brisket style 1 x 5-6lb slab of pork belly, skin off 1/4 -1/3 cup @hardcorecarnivore Red seasoning Half cup of water Half cup cider vinegar 1. Preheat a smoker or pellet grill to 275. 2. Slice the belly in half lengthways. 3. Season well on all sides with Red seasoning, then place onto the smoker. 4. Combine the water and cider vinegar into a spray bottle. 5. Cook the pork belly for 5 to 7 hours, spritzing every hour as it cooks. It should measure at least 200°F internal temperature and feel very soft and malleable when done. 6. Wrap the pieces in butchers paper, then place into an insulated cooler to rest for at least 30 minutes and up to two hours. 7.
