Longoniza Skirt Steak Pinwheels🔥 Recipe⬇️ Grill: Masterbuilt Gravity 600 Ingredients: 1 piece of skirt steak 1lb longoniza (Longoniza is a spicy pork sausage similar to chorizo.) 1/2lb Oaxaca cheese AP rub to taste Paprika heavy rub to taste 1) Brown up your longoniza and let cool. 2) Trim your skirt steak to make it uniformed on all sides, this way when you roll up you have no runs in your pinwheels. Hit with both rubs. 3) Layer down longoniza and Oaxaca and roll it up with one hand while turning your scraper in a circle! (Who can finish that line!?) 4) Toss in your smoker until it’s almost cooked through and toss on your griddle and sear on all sides.
