Muhammara (Red Pepper & Walnut Dip) Ingredients: • 3 red bell peppers • 5–6 cloves garlic • 2–3 tbsp olive oil (for roasting) • 2 slices bread (any bread, whole wheat works well) • 1 cup walnuts, toasted • 2–3 tbsp virgin olive oil (for blending) • 1 tsp cumin powder • 1 tsp paprika powder • Salt & pepper, to taste • 1 tbsp tomato paste (or chili paste, if available) • 2–3 tbsp pomegranate molasses • 1 tbsp lemon/lime zest • 2–3 tbsp lemon/lime juice • Pomegranate seeds, for garnish • Fresh parsley or coriander, for garnish • Warm pita bread, for serving Method: 1. Preheat your oven and line a baking tray. 2. Rub the bell peppers and garlic cloves with 2–3 tbsp olive oil. Place them on the tray and bake on the top rack for 20 - 25 minutes, until blistered and blackened. 3. Remove from the oven, cover with foil, and let rest for 15 minutes to soften. Peel off and discard the skins. 4. In a blender, combine the roasted peppers, garlic, and any juices from the tray. 5. Add bread slices, toasted walnuts, extra virgin olive oil, cumin, paprika, salt, pepper, tomato paste, pomegranate molasses, zest, and juice. 6. Blend until smooth and velvety. Taste and adjust seasoning - more salt, lemon, or pomegranate molasses as needed. 7. Spread onto a platter, garnish generously with pomegranate seeds and fresh herbs. 8.
