Falafel, but make it waffled! These are our new @PlanetBox fave- crispy, packable, and perfect for dipping! What you’ll need: 1 cup dried chickpeas 1/2 onion 1 bunch cilantro, chopped 1 bunch parsley, chopped 3 garlic cloves 1 small serrano or jalapeño (optional) 2 tablespoons of flour (chickpea, tapioca, wheat or a g/f blend all work well). 1 teaspoon cumin powder 1/2 teaspoon cardamom 1/2 teaspoon paprika 1 teaspoon salt 1/2 teaspoon baking soda Directions: 1. Cover chickpeas in 3 cups of water and soak for 8 hours or overnight. 2. After soaking, drain and rinse chickpeas and add them to a food processor or high powered blender. 3. Add the onion, garlic, cilantro, parsley, (and pepper if using) to the food processor. Process until everything is incorporated and even in texture. 4. Add in the flour, cumin powder, salt, baking soda, cardamom, and paprika. Mix again to incorporate. 5. Pop falafel mixture into the fridge and chill for at least 30 minutes. 6. After chilling the mixture, heat up your waffle maker- if it has heat settings turn it to medium high heat. 7. Spoon in 3 to 4 tablespoons of falafel mixture to the waffle maker. Spread into an even layer filling all corners, it won’t expand much. 8. Close the waffle maker and cook for about 3-4 minutes or until the falafel has turned to a nice brown color on the outside. 9.
