We're making the most of fig season with an ice cream that uses the whole plant. Steeping fig leaves in milk imparts a flavor similar to toasted coconut, marzipan and vanilla with subtle green notes. We used this to make an ice cream base and layered in fresh fig jam after churning. Have you cooked with fig leaf before?
