Crispy Smashed Potatoes 🥔 (+ Homemade Ketchup🍅) Need another easy vegan side dish? Make the viral crispy potatoes with me with infused rosemary oil made with my @levo_oil infusion machine.🌿 With my LĒVO machine, for the infused oil I set the temp to 170 for one hour. I used 2 tbsp of dried rosemary, but don’t forget that you can also use fresh herbs in here because it has a drying mode for those before infusing. I love making other herbal creations like herbal body butter, infused syrups & more! 🤗 Ingredients: •1.5 lbs baby potatoes (Yukon gold or red potatoes work great) •2–3 tablespoons rosemary-infused oil (from your Levo) •1/2 teaspoon garlic powder, onion powder, or paprika (optional but yum) •Salt & pepper, to taste •Fresh chopped rosemary (optional, for topping) Instructions: 1. Place whole baby potatoes in a pot of salted water. Bring to a boil and cook for about 15–20 minutes, until fork-tender but not falling apart. 2. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper. 3. Drain & transfer the potatoes to the baking sheet. Use the bottom of a glass or a potato masher to gently press each potato flat (about 1/2 inch thick). 4. Brush or drizzle your rosemary-infused oil over each potato. Sprinkle with garlic powder, salt, and pepper. 5. Bake for 25–30 minutes, until edges are golden and crispy. For extra crispiness, broil for the last 2–3 minutes (watch closely!). 6. Top with extra chopped rosemary, sea salt flakes, or a splash of lemon juice or balsamic if you like. Serve hot! Ketchup Ingredients⬇️ •1 cup tomato paste (one 6 oz can) •2–3 tablespoons maple syrup (adjust to taste) •1/4 cup apple cider vinegar •1/4 cup water •1/2 teaspoon garlic powder •1/2 teaspoon onion powder •1/4 teaspoon salt Instructions: 1. In a medium bowl, whisk together all the ingredients until smooth. 2. Taste & adjust➡️ Add more maple syrup for sweetness. Add more vinegar for tanginess. Add water to thin it out to your desired consistency. 3. Pour into a jar or squeeze bottle and refrigerate. *Keeps in the fridge for up to 2 weeks. #LEVOpartner #levo420creations
