100% Whole Wheat English Muffins (using @tehachapigrainproject (https://www.instagram.com/tehachapigrainproject/) Sonora and Rouge be Bordeaux) 🌾 These are perfect for a morning meal before school or work, or to be eaten as an afternoon snack. We recommend topping with a pat of butter and a schmear of your favorite jam. 🍓 1.5c whole milk 1.5 tbsp yeast 1-2 tbsp butter Big spoon of honey 420g flour (ish) 20g sugar Salt Cornmeal Milk + yeast in a bowl for a min or two. Add everything else except cornmeal. Mix by hand or on a mixer for 3min ish (it will be sticky!) Rise in the fridge for an hour. Roll out on cornmeal to 1.5 inch thick and cut out. Rise again for an hour or pop them in the fridge overnight for breakfast. Cook 2 min ish per side on a preheated cast iron, we used the No.12 Skillet. Finish them on a tray in the oven at 350 for 7min ish. Eat way too many.
