A bushier plant produces more blooms. If you have a dahlia which has one single stem, you can cut it like this to encourage it to branch out. There are two growing points/buds just above each set of leaves. Cut above a set of leaves (ideally third or fourth set) where there are two heathy buds. The plant will then put its energy into growing two branches which will each produce blooms. This is known as ‘pinching out’ and is often done at an earlier stage by just pinching the top out with your fingers. But a clean cut instead means you can also plant the cutting and it will have a better chance of rooting when potted, that too can grow into a bonus plant! There is a downside - if you do this, the dahlia will need to grow branches before it can produce blooms.
