This was taken right before I had a pretty intense anaphylactic reaction during an EBOO treatment. I had reacted to the heparin the last time I did it, but we tried again—this time with Benadryl beforehand, hoping it would help. A few minutes into the treatment, my chest got really tight. I knew something was off. My heart rate jumped to 188, and my blood pressure was high. I could hear the staff talking, but it was like their voices were fading in and out. I heard someone say, “We need to call 911.” Thankfully, the team @palmavitaclinic acted fast, gave me a steroid, and it worked. Afterward, my body went into rigors—full-body shaking—and they wrapped me in warm blankets until I came back around. I’m okay now, just processing the experience and learning from it. I wanted to share this in case anyone else is walking through something similar. Since I was able to finish the treatment last time with Benadryl, I honestly didn’t think twice about it not working again. I thought we had figured it out. But my body had other plans. And now I know—heparin is off the table for good. Healing isn’t always straightforward. But it’s always teaching us something. 💛 I am beyond grateful for everyone @palmavitaclinic and how quickly they acted and stayed so calm. 🙏

This chia pudding can be made the night before and served as a breakfast or snack the next day. Use any kind of berry and, if full-fat coconut milk is unavailable, any unsweetened alternative milk. Berry Chia Pudding Ingredients: 1 cup full-fat coconut milk (or any alternative milk) 1 cup fresh or defrosted frozen blueberries, strawberries, raspberries, or any combination ½ teaspoon lemon zest (optional) ¼ teaspoon vanilla extract Pinch of sea salt ( I used @amsalt.co vanilla bean salt) ⅓ cup chia seeds Optional Toppings: Toasted coconut flakes Chopped nuts such as pecans, almonds, or cashews Berries Instructions: 1. Place coconut milk, berries, lemon zest, vanilla, and salt in a blender and blend until smooth. 2. Pour the mixture into a medium-sized bowl and add chia seeds. Whisk until well combined. 3. Place chia pudding in an airtight glass container and refrigerate for up to 3 hours or overnight. 4. Whisk or mix pudding before serving. Last summer, @splashsummitwaterpark denied our daughter—who has type 1 diabetes and celiac—entry with her medically required food. She ended up sick. It made the local news. A lawyer got involved. And still, despite public backlash and professional advice, Splash Summit never once reached out—not even to apologize. Even after the news stations and legal counsel said it was the right thing to do. We’ll never go back. We’ll choose places like @cowabungabaydraper and @lagoonpark —places that actually accommodate the lifestyle we never asked for. 🙏 Praying with my whole heart that if your family goes to @splashsummitwaterpark this year, your experience is different. Ugh. I’m so bummed. 😞 I added eggs back in yesterday and felt so tired. Like, bone-deep exhaustion. I even took a nap — and I NEVER nap. At first I thought maybe it was just from the long busy day + super late night we had.... but then I ate eggs again this morning and bam, the same thing. Within minutes I was ready to crawl back into bed. 😩😭 It’s such a discouraging feeling — especially when you’ve been working so hard to feel better. Reintroducing foods is scary because when something sets you back, it’s like you lose a little trust in your body again. 🤦🏼♀️ But I’m reminding myself: this is part of the process my body is talking to me and I’m listening.
