Ingredients: - 1 SCOBY - 1 lb Wildflower Honey - 11g Ale Yeast - Water to reach 1 gallon The SCOBY should provide acidity, so I skipped any additions of Wine Tannin or balancing acids (like Malic or Citric Acid).
