From a happy accident to a 12 year-old restaurant, welcome to Honey Butter Fried Chicken, located in Chicago, Illinois! The lore: during their weekly dinner service, Sunday Dinner Club, a piece of fried chicken mysteriously ends up with honey butter on it. The entire kitchen team eats it. Audible swooning. Within moments, chefs/co-owners Christine Cikowski and Josh Kulp run into the dining room to tell their guests: “Put the butter on the bird!” In 2013, HBFC opened their doors in the Avondale neighborhood. Since then, HBFC has offered a variety of comfort foods, using only antibiotic-free, cage-free and humanely-raised chicken, and source ingredients and produce from local Midwest farms, and work to create a nurturing and supportive workplace for their team. From fried chicken sandwiches to pimento mac and cheese, and a variety of vegetarian and kid friendly offerings, there is something for everyone at HBFC! These savory chickpea pancakes with roasted carrots, beets, and a miso-tahini drizzle are vibrant, grounding, and full of plant-powered love.🌱 Here’s how to make them: 1. Roast the veggies- Slice 2 carrots + 2 small beets, toss with olive oil, salt, and pepper. Roast at 400°F for 25–30 min. 2. Make the batter- Whisk 1 cup chickpea flour, 1 tsp baking powder, ½ tsp each turmeric, garlic powder, paprika, salt, ¼ tsp pepper + 1 cup water. Stir in 2 chopped scallions + 2 tbsp roughly chopped parsley. 3. Cook pancakes- Heat olive oil in a pan. Cook 2–3 min per side until golden. 4. Whip up the sauce- Mix 3 tbsp tahini, 1 tbsp miso, 1 tbsp lemon juice, 1–2 tsp agave, a pinch of salt + water to thin. 5. Assemble & shine- Stack pancakes, drizzle sauce, top with roasted veg, sunflower sprouts, lemon juice, Maldon salt + a sprinkle of sumac. Eat with intention. Love the land. Who doesn’t love their greens?! 🥬 Our new a la carte leafy greens apron with embroidered lettuce leaves for all of our fresh veggie fanatics! 💚 We teamed up with our friends @gothamgreens & @itsromab to give you the best Tofu Cutlet Pesto Sandwich with Caesar Salad (plant-based!) you’ve ever had! 🌱 🥖 😮‍💨 Recipe below 👇 Ingredients ✨ Vegan Cutlet - 2 Slabs Extra-Firm Tofu (Need just 1 block, cut 2 cutlets - 1 Cup Plant-Based Milk (Unsweetened, soy or oat) - 1 Tbsp Dijon Mustard - 1 Tbsp Flaxseed Meal (To make flax egg) - 3 Tbsp Water (To make flax egg) - 1 Cup Bread Crumbs - 1⁄2 Cup All-Purpose Flour - 1 Tsp Smoked Paprika - 1 Tsp Garlic Powder - 1 Tsp Dried Basil Seasoning - 1 Tsp Oregano - 1 Tsp Salt - 1 Tsp Ground Black Pepper - 1⁄2 Cup Neutral Oil (For frying) Vegan Pesto @gothamgreens Pesto For Assembly: - 2 Small Ciabatta Rolls (Toasted) - 1⁄2 Cup Mozzarella Shreds - 1 large Tomato - 1/8 cup Fresh Basil (chopped) Side Caesar Salad @gothamgreens Baby Butter Head Lettuce @gothamgreens Vegan Caesar Croutons Cooking Method ✨ Prepare the Veggies & Tofu: - Chop the basil - Cut 2 large slices of tomato - Make flax egg (flaxseed meal + water) - Cut 2 slabs of tofu (~1.5 in thick) Prepare the Cutlets: In a bowl, whisk plant milk, Dijon, and flax egg. In another bowl, mix flour, breadcrumbs, paprika, garlic powder, oregano, basil, salt, and pepper. Dip tofu slabs in wet batter, then coat in dry mixture. Fry the Cutlets: Heat neutral oil in a pan over medium heat. Fry each cutlet for 3-4 min per side until golden and crispy. Drain on a paper towel. Melt the Cheese: Place fried cutlets in the same pan after pouring out the oil, top with vegan cheese, and cover for 1-2 min until melted 🧀 Assemble the Sandwich: Spread @gothamgreens pesto on toasted rolls Layer on tomato and chopped basil 🍅 Layer on cheese cutlets Caesar Salad Chop Baby Butter Head Lettuce Mix in Caesar Dressing Mix in Croutons Enjoy! 😋
