Video by: @wholesomelymorgan BANANA CONFETTI MUFFINS INGREDIENTS: • 2 ripe bananas, mashed • 2 eggs • 1/4 cup maple syrup or coconut sugar • ½ cup plain greek yogurt (or dairy free yogurt) • 1/4 cup milk of choice • 1 tsp vanilla • 1 1/4 cups flour • 1/2 tsp baking powder • 1/2 tsp baking soda • Pinch of salt • 1/4 tsp cinnamon • 1/4 cup natural sprinkles (like Supernatural brand) • Optional: 1–2 tbsp white chocolate chips DIRECTIONS: • Preheat oven to 350°F. Line a muffin tin. • Mix banana, egg, syrup, milk, yogurt and vanilla. • Add dry ingredients and stir until smooth. • Fold in sprinkles (and chips if using). • Fill cups 3/4 full. Bake 18–22 minutes until golden and springy. • Enjoy!!! STORAGE: store in an airtight container in the fridge for up to 8 days or freeze for up to 2 months
