We see it all the time: small companies grow, and the product quality is compromised as a result of prioritizing profits. From the very beginning, we have been committed to brewing our kombucha ourselves, for that very reason. When we had maxed out our capacity at our previous location, we got a lot of advice to give up the brewery and start outsourcing our production. Maybe we should have listened- because building this space this year has not been without its challenges- but we kept coming back to one thought: Kombucha brewing is a little magic and a lot of chemistry. As we have grown and been able to afford better equipment, our product has gotten even better. Building our dream brewery was a big swing, a leap of faith, but we’re stoked to have been able to do it and even more excited about the quality of the kombucha that we can make here.
