Kitchari is a beloved staple in the tradition of Ayurveda. Nutritious and easy to digest, it is the perfect meal for Ayurvedic cleansing as well as a healthy, delicious meal in its own right. All the Details 👇 INGREDIENTS: 1/4 cup yellow split mung (soaked for at least 4 hrs, rinsed) 1/2 cup basmati rice (soaked 30 min, rinsed) 2-3 cups water 2” piece of fresh ginger, grated 1 bay leaf 2 cardamom pods 2 tsps Banyan Kitchari Spice Mix 1-2 tbsps ghee (or coconut oil) Cilantro and lime/lemon wedge to garnish INSTRUCTIONS: - Rinse mung dal and rice - Turn InstantPot to saute for 5 min. - Melt ghee in pot - Add cardamom pods, bay leaf, ginger and kitchari spice mix - Sauté for 30-60 secs, stirring periodically - Add mung dal and rice, stir until coated in spices and ghee - Add water, put lid on (turn the valve on top to ‘seal’) and pressure cook for 10-20 min. - After timer goes off, release the pressure by turning the valve on the lid to ‘venting’ - When the steam has released, remove lid and your kitchari is ready! - Serve and garnish with cilantro and lime/lemon juice - Add salt or pepper to taste - Store leftovers in fridge for no more than a few days to maintain prana Makes 2-3 servings 🍽️ #kitchari #instantpotrecipes #instantpot #kitchariinstantpot #kitcharirecipes #ayurveda #ayurvedaeveryday #ayurvedafood #ayurvedarecipes #livingayurveda #wellnessrecipes #cleanserecipes #ayurvediccleanse #wellnessasmr
