Ingredients • 2 tbsp buckwheat flour • 2 tbsp coconut flour • 2 scoops Ancestral Vanilla Protein Powder • ½ tsp baking powder • 2 eggs • ⅓ cup milk (dairy or non-dairy) • ½ tsp apple cider vinegar (to activate the milk) Optional Toppings • Maple syrup • Butter • Patriotic sprinkles Instructions In a small bowl, mix the milk and apple cider vinegar. Let sit for 2–3 minutes to curdle slightly. In a large bowl, whisk together the buckwheat flour, coconut flour, protein powder, and baking powder. In a separate bowl, beat the eggs. Add the milk mixture and whisk until combined. Pour wet ingredients into the dry and stir until just combined (do not overmix). Cook on a lightly greased skillet over medium-low heat, 2–3 minutes per side, until golden and cooked through.
