Ingredients: 1 cup white rice (long grain is best) 2 ½ cups water (for soaking) 2 cups cold water (for blending) 1 tsp Nutricost Cinnamon ½ cup sugar (adjust to taste) 1 tsp vanilla extract (optional but recommended) 2 cups milk or plant-based milk (almond, oat, coconut, or more water if dairy-free) Optional for Serving: Ice Ground cinnamon for dusting Instructions: Soak the rice and cinnamon Rinse the rice. In a large bowl or blender jar, add the rice, cinnamon, and 2 ½ cups water. Cover and let it soak for at least 4 hours, or overnight in the fridge for best flavor. Blend it all up After soaking, blend the rice, cinnamon, and soaking water together until very smooth—about 2–3 minutes. Strain Pour the mixture through a fine mesh sieve or a cheesecloth/nut milk bag into a pitcher to remove solids. You want the liquid to be smooth. Add sweetness and creaminess Stir in the sugar, vanilla, and milk (or extra water for a lighter version). Mix until everything is well combined and the sugar is dissolved. Chill & serve Refrigerate until cold, then (if desired) serve over ice.
