Oh, the dreaded overproofing of the sourdough…🤪 Everyone has done it at least once. I’ve done it MANY times! Maybe the heat or humidity pushes your dough to ferment quicker than expected or you sleep in too long when you’re dough is proofing on the counter overnight (this has been me) causing your sourdough dough to be majorly over-proofed. But all is not lost! Here’s three ways salvage it: 1. If it’s not totally unmanageable, try to shape and bake up your loaf/loaves anyway. You might be surprised. Some of my best loaves have come from dough I thought was too far gone. Plus, IT’S STILL BREAD. So even if it’s a little flatter than normal, you still made a loaf of sourdough and should be proud. 2. You can easily make focaccia instead and it will be amazing! Place 2 Tbsp of olive oil in a 9x13 pan. Stick your over-proofed or over-fermented dough in there and let “rest” aka spread out for 1-2 hours. Preheat oven to 425F/218C. Sprinkle another 1-2 tbsp on top of your focaccia. Dimple the dough with your fingers by pressing down into the dough and wiggling your fingers. Add fresh rosemary and coarse salt, or any of you favorite toppings. Bake for 30-35 mins until nice and golden brown. 3. Turn it into pizza. I swear whoever really invented the idea that putting crushed tomatoes, mozzarella cheese and basil on fermented dough is an absolute genius. Being Italian, I will claim it came from my Mother country, but I digress. 😉 A fail isn’t a fail, it’s just an opportunity to learn how to do something better next time. So don’t fret if overproofed dough has happened or will happen on your journey. Cutting back on bulk fermenting is usually how it can be fixed, especially in warmer months. You just need to learn to read your dough and figure out what works best for your environment and you’ll get great bread, every time!!
