Modernized wheat has been genetically bred to have a higher gluten content that’s not easily digestible for the human body. Its 42 chromosomes and 3 DNA strands make it almost impossible for us to break down in the gut, causing chronic inflammation specifically in the lining of the small intestines, which can thin overtime and cause issues like leaky gut and even an autoimmune disease, like celiac. Modern wheat has also been grown to withstand harmful pesticides that cause a slew of other problems and diseases. This is why we originally switched to organic wheat, but unless I combine it with a sourdough starter to help ferment the dough and make the gluten be easier to digest, I can’t eat it. When we started this journey I began using ancient grains like Kamut. While it was so much better than modernized wheat and eliminated a lot of the issues I was having I still felt bloated, heavy, and noticed inflammation throughout my body, especially in my chin. ENTER EINKORN INTO THE PICTURE 🥹 This is the first grain I can eat without any symptoms, even without the addition of sourdough. I can actually feel a difference in my body when eating 100% fresh milled Einkorn and it’s almost like a spiritual experience. Call me crazy, but it’s true. Einkorn is the ORIGINAL ancient grain. It only has one DNA strand and 14 chromosomes, making it the most digestible grain on the planet for the human body. Our kids even tell me they feel different when eating 100% fresh milled pancakes in the morning compared to our Kamut ones. It blows my mind and makes me so grateful. Fresh milling keeps the majority of the nutrients in the flour. Within 24 hours, it loses 40% of its vitamins and minerals. So that flour we grab in the grocery store, really isn’t doing us many favors. This is why I invested in a mill to be able to grind my own Einkorn grain into flour right when I need it so we’re keeping as many nutrients as possible.
